Looking for ideas to help with coping nightmare

True, that would provide us the look we were going for. Do you think it is going to be an issue with rain going into the pool like I think someone else is suggesting it may be?
Gentle slope the turf from the 8inch height of the coping to a 6 inch or 4 inch step to the concrete pad. You still may need a drain.

There was no conversation with our PB about elevation. I just know from the top of the coping to the ground is 8 inches. The bottom of the coping is very jagged so it needs to be covered by something. We have concrete slabs between our house and the pool, so whatever goes onto the dirt area needs to be level with those. The design idea we were supposed to have is like the pic below.

Is there a reason it could not look like this now? Assuming your yard had a sloped grade to keep water away from house and porch as it should, I would think the PB set elevation of pool to at least elevation of existing deck. That's not taking into consideration elevation issue he may have had with other structures. But, you can't have pool lower than deck or it would be a retention pond for dirty runoff. You can't have deck lower than pool or it will flood with runoff. The big question is what is elevation of pool to the decking, not to the ground. If they are level with each other, there's no other elevation to set it, and you just fill what's needed till you have the flat between for sod. With exception that a drain is usually needed between pool and deck.
 
One of the nicer pools that I've seen in my area actually has a step/curb all the way around it. It's almost like the bond beam was raised 6" or so. It makes it so nothing on the ground blows into the pool.... Its different, but its pretty cool, especially if you have a lot of trees that drop leaves.
