I am going on my 19th year with the white plaster and it is still in pretty good condition. If you stick with TFP methods and keep CSI in a reasonable range, the plaster will last a good long time.
My experience locally (just a few pools between mine and my neighbors), plaster color and mottling can be hit or miss depending on the workmanship and the color you’re after. The full on pebble pebbletec pools look much more uniform. The surface roughness of either never registered for me but not much bothers me lol. There could be lots of reasons for the differences between just the pools I’ve seen up close, but I’m mentioning it as something to consider.
The coarsest Pebbletec tears my feet up, but anything finer than the coarsest grade is not a problem for me.
When I was speccing to build at my old house, I was going to go with plaster, but we bought a house with an existing pool instead. It has what I think is the mid-level of Pebbletec, and I've learned to really like it. I'd still consider plaster if I were to build, but that's more about my liking pools to take me back to the '80s while I'm in them. I'd probably throw in some lane buoys and the black swimming stripes on the bottom too.
