So I buy chemicals in bulk (50 lb bags) from the professional pool store and transfer them to smaller old Leslie Pool 25 lb tubs for easier storage and handling. Well, I forgot to write the correct chemical on the tub and now have two tubs with similar white powders. I'm trying to figure out what they are just by looking at the texture and have narrowed it down to either Sodium Bicarbonate or CYA. Please suggest if there is a test I can perform using the pool chemicals that I already have to tell these powders apart.

Sodium Bicarb should readily dissolve.

CYA typically takes more time to dissolve and will not fully dissolve unless in a large amount of water.

Put a cup of each in a 5 gallon bucket of water.

Why do you need baking soda? Only poorly managed pools using trichlor will need baking soda on a regular basis.

you could do a dilution using pool math for CYA.
You could do a pH test and 8.5 is sodium bicarbonate in aqueous solution
