Help! I need to remove heater and cut some pipes!

I’m planning on removing our pool heater (doesn’t work, corroded and leaking inside) and redoing the plumbing. I’ve never done pvc work before, but I watched a couple YouTube videos and it seems doable.

My question is, where should I cut?

My first thought is to cut where I drew lines on the picture, but I’m not sure if there’s enough pipe left there to add a straight piece.

can I just cap those pipes off instead of connecting them? It looks like the pipe below still connects everything

How much pipe do I need left to add a coupling?

All you need to do is cap those pipes off going to the heater. The loop below with the valve will allow the water to flow as it should. It appears that if you cut right at the edge of the elbows where you have marked in purple there will be enough pipe to put a cap on. All you need is a simple cap and an adhesive kit (primer and adhesive).
 
If you think you'll never use a heater in the future, you could cut on the red, add a coupling and two 90s with some pipe, and just remove that whole loop.

Otherwise, two caps where you marked will work fine. Be sure to open the ball valve all the way.
