Before everything gets turned on, I need to address this. These cracks are above water line, but still seems to be a culprit for losing water…I seemed to be adding quite a bit last summer. What is the best/easiest product to use to fix this. Our skimmer is under a lot of concrete.

If the cracks are above the water line they ae not the source of the water loss. You could make a thin mix of Plast-Aid and coat those cracks. The only true fix is a skimmer replacement. Most pool-leak detection companies are able to do that with minimal damage to the deck. We have a local company that can replace a skimmer with only a 12"x12" hole in the deck.

Is Plast-aid a brand? I’m not seeing it at Menards or Home Depot.
