Should I be concerned about these corners where it looks like the gunite has basically fallen off? Or is this something that I shouldn’t worry about and is easily fixed before plaster? Not sure why the pictures are coming out sideways. This is 2 different spots. Thanks.

My gut says that they will just plaster right over that stuff no problem..

No problem at all. Its more important that any of the loose stuff gets removed prior to plaster.
