How long can I leave my pebble tech pool empty in Winter in goodyear, az..?

Welcome to TFP! With that hard soil, you have much more stability than in other parts of the country. This is the time of year to do it since exposing the pebble to the AZ sun is something you want to avoid. How long do you expect to leave it drained? Major remodel or something?

Im doing an acid wash, bead blasting on the tile and re-grouting under the cool deck. Am I ok if its empty for a week. ?

You should be fine. We just had ours empty for 4 days in Sun City West for some of the same.
