We just had a Doughboy 12x20 octagonal/oval pool installed semi-inground with a (supposedly) 7’ deep end. The installer told is we could only have a 6’ deep end. Once we were finally able to use the pool we find the deep end isn’t even 6’ deep. Is it possible to remove the liner & have the deep end re-dug in the offseason & replace the liner? Totally feel as if we were ripped off as we only went with this pool because of the 7’ deep end. Anybody know if this is doable?

I don't see why you cannot have the pool dug deeper. Many people have added a deep end after the fact by digging deeper and then using an expandable liner.
You will have to get a NEW liner however. Your current liner has now pretty much "given up its' stretch" and cannot be re-used.
Thank you very much! I will plan on a new liner for next season, to me it’s well worth getting the liner a few years earlier than needed to get the depth I wanted when the project began.
