Any thoughts/recommendations on design of pool? The additional pic is what we are modeling it after. Any idea on what the 3 different heights are on the wall? We are trying to figure it out to mirror this look. Any help would be appreciated!

The plans call for the wall to be shaped almost like the picture, with various heights - 12" up to 18" then up again in the center to 24" and having the water scuppers discharge from there.
Consider that the space behind the spa will be a trap for poor circulation. You may want to back that spa up to the wall. In fact, have you considered putting it on one side or another and letting the stairs and the baha shelf butt up to each other?

Those sizes look about right for that pretty wall. I really like the design!
I agree with Maddie about the are behind the spa. I worry about it being a dirt trap as well as a trip hazard if someone mis-steps trying to get out of it. Something else to think about it is the view from the house. With the spa being raised you will not be able to see that part of the pool if you are sitting on the side of the spa.
I would do as Maddie suggested and shift it to one side.
I think it would be pretty to have the whole spa overflow BUT there are downsides to that.....any aeration of the water pushes the pH up. Add to that the splashing of the overflow onto the decking by the spa. It could cause water spotting in that area.
After reading all of this what are your thoughts? Our goal is for you to have as much info possible before you sign a contract so you get the best pool out there!

I like the spa as is. Its a neat look and well worth any minor inconvenience it may cause.
You'll be looking at the pool 99% more often than actually using it so looks should be more important than practicality...Please install lights in that trough around the spa!
That raised wall looks like 16", 24", 32" to me and that would make sense if it was built out of CMU block

I agree, the wall looks larger. I was guessing 12/24/30. We like symmetry, so the spa centered appeals to us. We may leave a 12” trough around the hot tub and add some returns in that area to get circulation. Lights in the trough could be a cool look! I agree there is some concern about the raised spa and not being able to see on the other side. Our back porch is raised and that’s also the reason we only chose to raise the spa 12”. I do have small children (almost 4 and 6) to consider. We did change the depth to go from 3.6-4-5 going from left to right instead of 3.6-5-4. Thoughts on getting a separate pump to run the scuppers and bubblers or run everything on the VS pump?

It's preferred to have the water features on their own pump but not necessary.
The Easytouch is outdated. Look into the Intellicenter instead.
Dump the Polaris and booster pump. A robot is less expensive upfront and less money to operate long term.
Sizing up the cartridge filter would be a good idea for a minimal cost.

Looks good to me. I like the bench on the back wall. IF for some reason you decide to not do the bench think about putting some kind of "finger ledge" on that back wall just in case someone needs to take a break over there. It will give them something to hold onto until help comes or they can finish moving to a place they can stand.

To be honest, I don't like the back bench. Too many places to recline and less space to float, or swim. Maybe I'm being a curmudgeon but it seems to be such a trend to just *sit* in pools.
How much sittin' do ya need? Steps=seats; Spa=seats (perhaps even less comfortable seats); Tanning ledge=seats.

Any thoughts on colored plaster vs Quartzscapes? Builder quoting 3k extra for Quartzscapes. Worth the upgrade?
