Cat5 has eight 24AWG conductors. If it's important to you, you can twist pairs together to get the equivalent of four 21AWG conductors.

You do not need shielding. Either stranded or solid will work fine.
shielding doesn't matter, I wouldn't bother (Pentair ships with un-shielded cable). solid is probably easier to work with but it also doesn't matter.
the most important thing is to make sure your cable is UV protected (rated for outdoor use) or the sun will corrode it and the rain will eventually cause internal shorts... the cat-5 cable that came with our house/pool failed in this manner
