Bad concrete pour, bowing shell....halp!

Our concrete deck was poured three weeks ago and we continue to find multiple issues:
1. Cracks where there shouldn't be. Builder proposed adding some scoring in those areas (which will look terrible)
2. Bad salt finish - large quarter size and larger pits
3. Crooked on one whole long side of the pool (it's almost wavy instead of straight)
4. Color not what we anticipated (they never showed us a sample pour)
5. And worst of all - the "bullnose" coping was all chewed up looking. They tried to smooth it out with a skim coat, now it's a different color and still not smooth and does not look bullnose at all (this is a "cantilever" style deck, which wasn't explained to us in detail)
They proposed adding a coating to the deck at cost; as mentioned scoring where there's cracks, and smoothing out the bullnose which so far isn't going well.
Then, as we were walking the deck this weekend, we noticed there's a significant bow in the shell at the end of the deep end, we're guestimating at 1.5 to 2 inches.
Along the long left side of the pool, as mentioned, not only does the deck wave in and out, there appears to be minor bowing there as well.
Also, pre-formed concrete coping pieces were used on the spa and that was a sloppy job as well. Rough edges where they trimmed them, all the corners are rough and chewed up looking. A couple pieces are higher/not lying flat. They proposed taking the tile all the way up to cover the edges and corners of the coping, but that is not going to look good.
We were nearly done, about two weeks away, now we're probably looking at a couple more months and not happy to say the least.
