I iwould say if you can't get the 1" square tiles then go with the subway style.
Yes, I believe it is. Also, did you look at all of your selections wet?
The only thing I see that concerns me is that the steps will always be in the shadows for the existing light layout, either from the angle of the sun shelf of the angle of the spa. So you might want to add one more small light on the side of the spa to illuminate the steps.

-1x2 tile please. I just LOVE that look! The colors are pretty too!
- larger, darker Noce is my fav! I would do it in BOTH places! It will help tie it all in and I just LOVE the colors in it! You start getting to many different styles and colors it starts to clash or work against each other. You want the POOL to be the focus! Let the eye slid by all of the rock right to the pool-the crowning jewel!

TM, we used the same split faced travertine on our columns and bond beam, but the columns are smaller pieces and rough and the bond beam are smoother and slightly larger. Perhaps something like that would work. I can always take a close up pic if you are interested.
