Concerned with a repair pool company did (potential cold joint?)

My pool company did repair (raising i did not ask for, which is totally separate issue) and I am concerned about how it was done and potential of cold joint cracking and letting water outside of the shell. Anyone can share their thoughts about it? Should I be worried or not? I assume the same material (yellowish in the picture) used under coping/tile through the whole perimeter (skimmer is now lower than it needs to be too).

So pool company did not follow our requirements for level of the pool and made it 0.25" from finished surface instead of 2". We got together and found solution - our concrete contractor would pour different mix for stamped conrete on the deck with 0.25" to align with the level of the pool. So far so good. Next week we arrive and pool is raised and tiled and coped...

Now I do not know where to go next... Should I accept that and just ask contractor to use thicker stamped concrete deck, or, if this repair is supectible to cracks - force pool company to undo it.

With current setup water level will be at the center of the lower of two tiles. And infinity edge is fake one - there is no water getting out of the pool.

I appreciate any thoughts!
 
Ah, and with that raise we are risking not getting through inspection due to first step and seating areas to be about 1" deeper than allowed by the code if I am reading everything correctly... But again, this is separate issue, as I am mostly concerned about integrity of this repair

Yeah, and in this case at least that particlar place will be below water - and this what concerns me. Any suggestions on how to find out if it is good repair or not?

This is "false infinity edge". Basically just a decoration and no function, but since no one will be walking there - we decided to do that. Did not want to increase complexity with additional catch basin and separate pump for a real thing.

I got more information today from a pool company. Regarding raised walls - "the crew cleaned and roughed the beam then used hydraulic cement for the buildup".

And to bring steps to code they proposed - "We will apply the plaster thicker on the top step to make up the difference."

Does this sounds like an appropriate technique or there are potential issues with these? Anything I should be bringing up for them to warranty in written form? I really want it to be done, but I do not want to deal with delaminated or cracked plaster in couple years from now, or leaking side of the pool...
 
Also, anything I can do about 1.5" inch lower skimmer besides keeping pool water lower? I will try to get pictures today of the current state it is in, but basically the opening starts about 1.5" below cap stone. I was thinking perhaps i can cut out somehow top of it, but not sure if this gonna affect skimming performance.

Something like this should work? How much space there should be above water to keep skimmer efficient?

If anyone has ideas about proposed fix for steps height (i.e. adding about 1.5" of plaster) and their use of "hydraulic cement" to raise pool with parts of the repair being below water line - please share you thoughts.
