Did you manage to get this sorted? I've been waiting months to have my coping tray lids installed and they look exactly the same (Pool Cover Specialists). Do the metal trays just sit on the grip tape of the bracket, or are they fastened, and was the coping supposed to be mortared on?!

The stone is sawn black basalt, 600mm x 300mm x 50mm with a half bullnose down 1 length. Definitely enough lip to slope away from the pool. Probably a 1" overhang. Similar to this:
