We just had Pebble Sheen Blue Surf installed and it is not as uniform as I thought it would be. There are areas where it is very blue, and areas where it is very gray. I would appreciate opinion from anyone knowledgeable.

Wait till the pool if full and the water is balanced and then take more pictures.
Secondly, put a defuser on the end of the garden hose while filling the pool so not to erode any plaster.
Thank you for replying! I didn't see a diffuser at Lowes, but did see a "bubbler" for "delicate watering" at Home Depot that comes up in searches for garden hose diffusers. I assume this is what you mean. Thanks!

Any feedback about the quality of workmanship? I'm curious if this is what is to be expected.

Quality of workmanship looks very good in pictures 1-3.
Picture #4, the tile should have been 1 less piece where it meets the wall, it’s always better to be short on the tile line and filled with plaster than having the tile halfway covered with plaster that will eventually break off and have an uneven edge. I personally like the cleaner look at the edges.

Yes, looks like a good job! The color shading variations and mottle for the darker plaster will be more evident in deeper water and will take a long while to fade out to an even look. Mine was near 6 months before I would call it even in color in the deeper parts.
