I would take all you have learned here and elsewhere in your research and write down the best practices and quality standards that you expect. Then review then with both the builder and the supervisor of the tile crew. You can have any discussions about tolerances that they commit to meet.
This can include:
- Thinset shall be applied with a notched trowel to the pool surface then the back of a tile buttered and placed on the wall.
- All tile cuts clean and level
- Uncut tile edges be on exposed corners and edges
- Tile spacing to be 1/8" +/- 1/32"
- Plastic tile spacers to be used to ensue consistent tile spacing
- Agree on the specific materials to be used for waterproofing, thinset, grout.
You can get a lot of standards from...
The Tile Council of North America, Inc. is an international trade association dedicated to expanding the market for ceramic tile manufactured in North America.

Also, ask to see some pools done by the tile crew you are getting. Although you have to trust they are telling you the truth.
