USF-we just had shotcrete done a month ago. We are in Pinellas County. Mine looked just like yours, maybe even worse. Tile and coping was done last week and the tile guy took almost a day going around and leveling the top with concrete/thinset. He basically created another layer that was perfectly smooth and level before installing the travertine paver coping. It now looks amazing. He did the same for the tile band around the pool. We have a 6" glass tile band and he smoothed everything out before installing. So you will be good and they will fix all the rough places. We are waiting for the Pebble Tec to be scheduled and installed and I was told that they will smooth out the other rough areas. I attached a picture and you can see the white thinset that was used to level the tile and the coping.
