Might not be the same tech but when I do hens I cut out the breast bone to flatten hens. It’s really really easy I think to cut it out. I stick scissors down the neck and make my cuts on both sides and pop it off. Then u can totally flatten it out.

It's easy. I'm no pro, I've always removed the back using a serrated knife. Scissors may be even easier and safer. I stand the bird on end and just saw the knife down one side of the back then down the other side. The bones are really thin so it doesn't take much effort. Then squash it flat which will take a bit of pressure.
 
Get a good quality pair of kitchen shears (Oxo makes a good one) and look up a video online for how to split a whole chicken (same process). You have to remove the wish bone (collar bone) with a sharp boning knife or else it will get stuck in the breast meat. But it’s not hard at all to do.
 
What kind of sausage did you put in the jalapeño river boat cruise?

The stuffing is a mixture of whipped cream cheese, Jimmy Dean’s regular breakfast sausage (I brown it first), shredded cheese (cheddar/jack is a good combo) and a tablespoons or two of breadcrumbs (plain or panko works best). I split the Jalapeño in half with the stem still on, clean out the seeds and pith, and stuff. Then I add extra shredded cheese on top. You can bake them on the BBQ or in an oven, whatever is easiest.
