I’m having a 15’x30’ oval pool installed in July.
I need to have 3 stumps grinded down from trees that were cut down. I just want to ensure there isn’t much settling of the ground. What should I fill the holes with? Tamp it afterwards with a gas tamper?

Grinding a stump doesn't remove it, only the top of it. The rest sits there just below grade and rots over time, causing a sinkhole. It'll take 10 years, maybe even more, but it will happen.

I cut 14 trees for my 1st pool and had the excavator pull the 5 or so stumps in the pool / patio area.
