Combined with the symptom, I've noticed a gas smell in the building next to the heater when it's on. This was never the case before. Going to leave it off until they check it out.

Yet another "I should have just repaired it myself".
I explained the symptoms to the tech - long time to heat, acrid smell, smell of gas.
He took the cover off and found that a gas junction after the regulator (where they had replaced a part) was only hand tight, and bubbled gas when he sprayed it.
A simple mistake that thankfully was not the cause of a bigger problem.

For future reference, if anyone doesn't know, spraying your gas lines with a mixture of (mostly) water and dish soap will easily reveal gas leaks. The gas leak will cause small and large bubbles and quickly pinpoint the issue.
