Since I don’t know what you are doing it is hard to say.

I place the multimeter in horseshoe icon and insert the red and black plugs into the new sfs to get the reading and it shows o.l in the multimeter screen
That is Out of Range so either you have an open circuit or your meter isn't being used correctly. There are sometimes two possible places to insert your red lead into the meter.
But when i put the same meter in the old sfs it gives the reading of 240
240 what?
Can you show the meter?
The sensor should be reading 3.8 Mega Ohms at 77 degrees Fahrenheit.
Can your meter read in the megaohm range?
Is the meter autoranging?
Heater has been on for the past 30 mins (with the original sfs that gives e06 after some time) the sfs temp shows 391. With the new one (from amazon) it would give the e05 right after it ignites.
You can remove the Test Lead Shields to get better contact with the test terminals.
Was the meter set to Continuity or Resistance?
