Well it will be about 1-2 weeks before the pool will be plastered. We will have a SWG with travertine coping and decking. I am on the fence to seal the coping or not while the plaster is not coming for 1-2 weeks. Any advice? I don’t want the coping to deteriorate, but I have heard that that is not always the case. Our Turkish coping is pretty dense with just a little pitting. If I do seal, I would go with miracle 511. So should I or not? Thanks!

Seal it if you're worried about stains - ie: Aunt Vikki's slippery hands with a bottle of red wine.
If it's just for the pool water then it shouldn't be affected as is
