Replaster job - Chipping around light niche and weather factors when plastering

Good morning. New to this forum and hoping someone can offer some advice. We are in the process of replastering our pool which we believe was built in the mid 90s. The company we hired came yesterday to prep for plaster (chipping around fixtures, acid wash, and bond coat). The chipping around most of the fixtures (drain, return lines, etc. seems fine, but it looks excessive around the light with nearly all of the concrete removed in spots. Should this be filled in with something (hydraulic cement maybe?) prior to plastering or is it okay to simply fill it with the plaster? We are using Diamond Brite.

Also, the plan is to plaster tomorrow morning. However, the forecast is for possible light rain tomorrow AM with clearing skies in the afternoon. Assuming it isn't pouring in the morning, is it okay to plaster with the threat of light rain in the forecast? My preference is to delay and wait for a drier stretch of weather, but I'm sure the replastering company wants to get it done so they can move on to the next job.

Others can chime in who know more but I do know on new builds from what I have learned and now experienced they like thier to be a deep pocket around all penetrations that then getcfilled with hydro cement before plaster. They like them deep to get good adherence to the concrete and fixture or pipe.
