It was about 50 degrees here yesterday when they sprayed our gunite. The PB told us that we didn't need to water the gunite because of the low temps and because we are supposed to get some spot showers here and there over the next week. Thoughts?

I would wet it down anyway. It can’t hurt.
I would also wet it down daily unless it actually rains. The slower the cure the stronger the shell. The low temps you have help alot overall but it's easy enough for some extra insurance
Proper curing of concrete has exponentially more to do with hydration than temperature, and the wetter it stays the stronger it will be. This is particularly important for the first 28 days.
