Don’t blame yourself. Look at the fantastic overall result. I think even if you have a pb, there’s always unseen things like this that pop up. Could you cut into the gunite? If you think you have a workable solution, now is the time to do it.
Choppy, take and share a pic and go into detail what you mean. I have someone that might be able to help you but I want to make sure they have all of the details.

You can see the bottom of the housing has to be at the level of the tile.
The top is what I hate. It’s not bad but flush is what I want.
Well at least they were consistent???? I am putting the call out to someone who might be able to tell you want to do or have done. I know what I think needs to be done but that is just my gut with nothing to back it up so..........not going to share it until all else fails!

Yea I get it. Believe me I’m pretty bummed. The only way is two things that I can think of. Dissect the shotcrete and reform or find a spa jet housing that’s angled.....
Choppy have you seen these? I think they can be used for pool spas. I know I have seen two builds with something like this:

What if they were recessed enough so that the top was flush with the plaster/tile and the bottom was recessed into the shell 3/4 an inch or so? Then round the plaster into the fitting?
No because plaster/quartz is not going that high. The back is all tile
Unfortunately the only way to get them flush is going to involve chipping out the Shotcrete. I would do it just enough to access the pipe and then heat bend them so they become flush with the wall.

Chop this is the master pool builder I asked for help. If it can be done he has done it and that includes making and fixing mistakes.

What's going to happen when you have it angled up and turn on that blower? I've heard those blowers put out some power and the last think you would want is water spraying you in the face. I haven't used a spa with a blower so I'm not speaking from any knowledge, just trying to make sure that isn't overlooked.
