So if I understand, the beam on the Gunite shell is 12” wide and the coping is 12” wide so when they have the coping over hang the pool, you have 2” of the Gunite bond beam exposed on the back side. This was the case with my pool as well, but we had decking to cover that last bit, you won’t. We had a similar issue with our raised wall. The wall was 12” wide then add the splitface travertine on the front, and the overhang, 12” wide wasn’t going to make it. Even 16” wide double bull nose would have been tight. They could have used 2 bull noses pieces and split them lengthwise but would have used more than double the travertine. Since we didn’t really care too much about the backside since we planned landscaping there, we just had then add about 5” wide pieces from scrap we had from the pergola columns. This worked well for our design but wouldn’t work for your design.
Sounds like they need to go with 16” wide coping instead of 12”. That is going to be a large cost as they will have to change out your material and won’t be able to resuse any of your installed coping. I hope it goes well for you with the PB
