I took the PVC down to the ground but at an angle.. It has been good for 8 years now and no leaks... I have done cannonballs into the pool and no issues
How tight are you all getting with those bolts? Mine drips and I've tightened over and over. I'm nervous about breaking it at this point. I've checked gaskets at least a few times and everything looks right (not pinched).

Did you use pool lube on gaskets and threads? Silicone based, not petroleum. That helps to tighten it without breaking and also to form watertight seal.
Also, if there are any imperfections with your cut, that can prevent a tight seal. I had just a like a half millimeter or so of my liner stuck on a thread on my return, and that interfered with the seal. I trimmed a hair off (with return still poking through so I didn’t cut too much) and that fixed it.
