The gaps are due to a straight flat product is being installed on a radius, the product should have been mitered with a back cut so the face is flush with the next piece.

Mine looks the same , I got the excuse that its for additional drainage so no water stays behind or between the stone and will help prevent efflorescence. They did grout some of the larger gaps but not all of it.

If each stone were set individually it would have been more uniform and more labor too. What you had installed are prefabricated panels of multiple stones. If everything were mitered it would have had minimal if any gaps. I am sure for the right price curved panel could have been used, might have had to be custom made.
