Glass tile waterline....is this something I could tackle myself? From what I have read, it seems a little more complicated than installing ceramic tile.

Spookie, if you’re comfortable with a project like that, and you use the correct materials to do it, I don’t see why not.
When I remodeled my old kitchen, I installed a glass tile backsplash and had never worked with glass tile before. It was a little nerve racking making sure everything was straight and perfect looking, as glass tile will show the smallest imperfections. But in the end it came out great.
The hardest thing working with glass tile is, making sure you have the correct tools to cut the tile with. Glass uses different tools then other tile.

I installed our 1" glass tile. No different than any other tile, just use unsanded grout.
