I'm thinking I may move both lines over with 45's at different heights sub surface to space them out a bit and make a more manageable manifold. Seem like a decent plan? How far down is the flexpipe usually? Any input is appreciated!

Once anything hits the dirt, there are zero promises. But flex pipe only bends so far and they look pretty straight to me so I'd guess they go down at least a foot before bending.
It should be easy enough to find out.
Suggest you go back with diverted valves and ditch the ball valves. The hard pipe most likely goes down 12-18 inches To connect to flex pipe.
Pretty sure it's couplers to flex right at grade. If so and the pipes are as straight as they are, I agree it probably goes down before bending.
