Flagstone Coping

we are building a pool and we have flagstone going around it. I've attached pictures. If you look around the beach entry it looks like a smooth wave and the concrete goes up to it nicely. On the sides it is very jagged and the concrete could not get in between. Is there a rule when doing flagstone? The stone guys are not much of a help.

Unless specifically requested, the rough exterior line of the flagstone coping is quite unusual. It's not my cup of tea. Practically all have a uniform outer edge that I've seen.
 
There should be a 1/2"-3/4" expansion joint between the deck and the coping which should be filled with backer rod and polyurethane caulk, like sikaflex.
