Decking material question

Shopping two bids for a new pool. The design is basically the same. Both include 5cm coping, but the decking is 3cm travertine on one and something thinner (<2cm?) limestone on the other.

1. Is a 3cm paver important? Unlike coping, you really don't see the edge. I assume proper ground prep is the real difference-maker.
2. I think I prefer limestone over travertine, but opinions on why one is better?

Travertine is a softer stone than limestone.

There are also different grades of travertine and many folks in Texas seem to have problems with lower quality travertine.
