There are many ways to do it, depending on many details of your pool. Here are some hints. Aim at least one return down towards the bottom of the deep end. Adjust things so that the water moves in a consistent circular pattern that carries debris to the skimmer(s). Watch surface debris to see how you are doing.
I am not an expert but from my limited experience you want to adjust the return jets to create either a clockwise or counter-clockwise flow throughout your pool. You'll have to experiment to see which works best. The objective is to get the water moving around your pool and back towards the skimmer. You may have to tweak the eyeball returns several times to get a decent flow. You also may have to consider which way the prevailing winds come over you pool, etc. Good luck!
