That looks great!
I'm right behind you, that skimmer is a pain.
I'm just waiting for summer to be over and will do the same project.
Care to post the parts you used if you happen to remember? I'd like to do it the same way.

I wish I knew all the proper names for these parts. Starting from the skimmer working down, I threaded a 1.5" male adapter into the bottom of the skimmer then glued a length of 1.5" pipe then another 1.5" male adapter into a 1.5" ball valve then another adapter and short length of pipe then a 1.5" coupler into a 2" x 1.5" reducer. The collar on the original Intex hose will screw onto a 2" PVC but I had to buy a bathtub gasket ring and trim it to fit inside the collar so it would seal.

Now I just need suggestions for planting ideas to help hide the walls of the pool and to keep drunk folks from stepping off into the abyss. I am in metro Atlanta so I think this is zone 8-9? The area around the pool gets full sun between 9:30am and 6pm. Needs to stand up to salt water, obviously. Nothing that will poke the walls and cause punctures.
