Forgot to mention that I can't use concrete (told by pool installer). So I don't know what else to do. I don't think the wind can carry mulch into pool, but probably would get stuck to bottom of feet. But if I put enough plants then people won't be able to walk on that side.

That looks great. Ours will be a little deeper so I think the mulch would end up floating in the pool. Also i'm putting a fence around it, and didn't want grass inside the fence area. But i'll need to be able to walk around the pool so can't have just gardens..
