The deeper your shallow end the less the slope/transition will be to the deeper end. I would go 4' to 6.5' 6.5' gives you better chances of doing a cannon ball without hitting your bum.

When your test kit gets there do the CYA test and let me know what it is at. If it is low enough then you can use the stuff they sold you. We shall see when you are able to test.

I love my sand filter! No matter what kind you get (Sand, cartridge, DE) get the biggest one your wallet can handle. Pump should be a variable speed if at all possible. If that is too rich for your wallet then a 2 speed would work.

I do not see anything about removing the old plaster. You need a full chip out for the best long term outcome.

I have to say there are not any I would want to live in around here for the reasons @sande005 stated. Just too crowded.

Make sure you put valves under the return and skimmer so you can close them when you need to work on the equipment. Also make sure to put unions on both sides of the pump and filter to make it easier to remove and replace.
