It does seem to go "poof" as you state when I brush it so maybe it is algea. Didn't think it could grow that fast in an 8 hour span. The SLAM continues then.

So pool math says I need 8 lbs of stabilizer. Will need a couple socks to achieve that. Do I put all 8 lbs in socks at once or just fill one sock with as much as possible and once it dissolves add more?

Thank you for the advice. To be clear I don't start SLAM or add chlorine until after the CYA is increased so that it will be more effective.
