    The weather was perfect, Pork Legs on sale and friends to help cook (it’s part of my recipe). We brined overnight the quarters, rubbed with spice/OO and seared, then slow-cooked for about 12 hours. 75 pounds of the best pulled pork I’ve ever made. The Chicken was added to keep an eye on the fire!

    Sounds like you're on a good track. I agree, the CYA test is tricky and varies with light source and perception (my eyes play tricks on me sometimes) . I suggest purchasing a 50PPM CYA standard. It's a good reference point.

    Good advice already provided here. FWIW-I agree with your idea of supplementing with pucks when going away. I do the same thing and it works beautifully.

    As I said, it's "definitely" coming (migrating) from the cement. The picture you posted was very clear and certainly recognizable as inorganic carbonate build-up. I would first try and seal anywhere feasible. May not work, but not much to lose. If not, clean the spots with HCl like you did...

    Yes, exactly why I mentioned scaling ("leeching"/"Efflorescence") or whatever it's called. I'm firm on it being a form of carbonate; most likely calcium. Maybe or maybe-not added in excess to aid the cement cure time. The waterfall is the perfect environment for formation of carbonates.
