"255" looks suspiciously like the largest value they could store in one byte, which is another way of saying that the thermistor resistance is lower than they can measure, which is another way of saying that your temperature sensor is probably shorted. Maybe because water got into it, which happens.
You can buy a
Pentair replacement for around $25, or an aftermarket sensor for a little less. Installation is easy: Look around your equipment pad for a hose clamp holding the old sensor onto one of the PVC pipes. Loosen the hose clamp and remove the old sensor, put the new sensor in the hole, tighten the hose clamp. Find where the old sensor's wires were attached inside the EasyTouch panel, and put the new sensor's wires on those terminals instead.
