It looks like some grout is missing from around the skimmer box. Is this an easy repair and, if so, how would I go about finding similar grout and applying it?

Some products, like the 2-part epoxy shown above, can be applied underwater. They harden and you have to ensure it's the best product for the application. Let's try @1poolman1 once again to see what he would recommend.
In areas like these, where the water rushes through constantly when the system is running, using epoxy will only last for a limited amount of time. Specially if there are leaks present.
I would recommend draining the water about 2 inches below the bottom of the skimmer and applying hydraulic cement.
You can find it at home depot and its a white powder compound that you mix with water and apply it to the area. Make sure you apply it before it gets rock solid (usually takes about 1 min for that to happen) and then use a sponge to smooth it out and remove the excess material.
I forgot to add that this is a salt water pool, if y'all didn't see it in the signature. Does that change the product recommendation for this repair? Also, any suggestions on what to use to clean off the rust deposits?
