Too much demo??!!

Day one of the pool renno. New coping, tile and plaster.

The demo guys are taking out the old coping with a jackhammer. I’m seeing that in some places the demo is going below the level of the coping stones - as much as an inch below what used to be the tile line. Not seeing this around the entire perimeter but a fair amount. Someone tell me this is a perfectly normal part of pool demolition.
 
Clearly now they are demoing that deep on purpose. I had anticipated the demo would take off the coping stones and the tiles only. I had thought the cement behind the tiles would be left intact. I was probably wrong to think that
