I recently had a pool renovated which required some minor replumbing and relocation of wall jets. The two jets that were relocated aren't putting out as much flow as I would like. How much of a factor is the hole size in increasing or decreasing flow? Do I get more water pressure from a 1/2" opening vs 3/4 or 1"? Or vise versa?

A larger opening requires more flow to maintain the same pressure.
For a given flow the smaller orifice will give a higher pressure.
