Very confused about what kind of caps/plugs to use for my pool jets

Short explanation:

This is my first year closing my pool. We have two standard-looking jets that we need to plug for winterizing. We figured, okay, these are 1.5", so we will get these screw-in plugs. http://a.co/d/iAMjFZN Easy enough, right? When we went to unscrew the jets, only the plastic ring around the outside/front of the jet pipe (eyeball?) came off. Now there's just a 1.5" threaded pipe sticking out of the wall of my pool. Obviously the above plugs won't work; we need a cap to screw over the pipe. I thought it would be a fairly standard piece, but I cannot find anything like that anywhere. Am I doing something wrong?

Please upload a picture of what you are describing. If you removed the eyeball returns and only the cover came off, and the threaded part is still in the returns, they will come out easily. There is a removal tool you can purchase, and or grab 2 small needle nose pliers, carefully with light pressure turn counter clockwise in the same direction and they should be unscrewed easily. I always recommend to not over tighten any eyeballs for the reasons you state. This is assuming what you are describing is how I am understanding.

Just a couple threads is sufficient, sending them home also cracks faceplates.
