The paver popped off over the winter due to the stress from the winter cover.

What can I use to reglue it down? Base is concrete. Whatever the original landscapers used (owners have retired and closed shop) was thick and the pavers were lifted off the ground due to the glue, prob intentionally to avoid ice from damming up underneath.

Probably not glue but Type S Mortar.

Show us pictures of the area and back of the travertine stone that came loose.

You can try...

my pool guy (not a landscaping guy) suggested PL Premium...

I would use the one made for stone...

Your coping was just tacked down and not laid in a bed of mortar.

I read the landscape version data sheet says that it’s not for damp environments?
Pool coping is installed with Type S Mortar.

No construction adhesive is the best product to secure pool coping. You had a lazy installer who took shortcuts. You can follow him or fix it the right way.
