I hesitate to give advice here because I'm such a new pool owner. But, what you're going through with high FC levels and trying to adjust your salt cell properly is exactly what I went through a few months ago. I also helped my neighbor transition from chlorine tabs to a salt cell so I actually do have a little experience that I can share. Having said that, there are many helpful people here who have forgotten far more about pools and water chemistry than I will likely ever know. They were super helpful to me when I started out.
BTW, I was going to add that if your FC level jumps a lot (up or down) once you turn your cell back on (say 2ppm in a day), you will likely need to make a bigger adjustment on your salt cell than the 5% I used in my example earlier. Hope that makes sense. Also, I'd buy a couple more gallons of liquid chlorine so you have it on hand just in case your FC drops more than you expect and you need to raise it quickly.
