We’ve always had help closing our pool but this year I am feeling fairly confident in doing it ourselves. My one area of concern is the main drain/skimmer. We have one main drain and one skimmer and they are plumbed together so I only have one shut off valve. What steps should I follow to make sure this is winterized correctly? Thanks!

Is the main drain plumbed through the skimmer? If so, you should be able to use a gizmo to blow out the MD separately and seal it off. If the pipes are connected underground instead, then you still should be able to blow both out at the same time with a large enough blower.

There should be some more details here:

They are connected together under ground. So when blowing out the lines do I cap the skimmer first and then what do I do with the only valve?

After I see air coming out of the main drain and the skimmer, should I turn the valve off at the pad?

So you blow out the skimmer first and of course with the water below the skimmer opening as mentioned earlier then blow more till lots of air bubbles come out of the MD then close it off with valve. I recommend if has a removable handle to then remove it to keep anyone from changing the valve position and mess up the air lock.
