The short story: Pool is off level by 2.5" in one corner with 2" off level along that side. Can I live with it for 2 swimming seasons? Even for this year only until september??

The Long Story: Ok. Being the can't sit still, anxious person that i am. I did not carefully read up on how to level. I leveled with 2 inches sand for about 7 hours of the day, took a long 2x4 with a 6ft level on top and dragged it accross the long and short sides to check the level. Looked fine to me, up went the pool, in went the water! I immediately noticed the water was running towards. The back of the pool but it was very slight so I figured i'd let it fill first before I go nuts. Once it was full, it was off level by almost 3", however what scared me was that one of the back corners was off by almost 4" (it was the only corner that I did not put pavers underneath the support legs since it was higher than the rest of the legs, but it obviously settled and sunk in overnight). I let it sit like that for a week. Then, I noticed I had way too much salt in the pool so figured I had to drain 20% of the pool, might as well drain half. Drained half, took a floor jack with a 2x4, put my 2x4 in the corner that was sunk, jacked it up carefully, got my paver underneath the leg. Believe it or not, the level got worse! I was now 5" off level in that corner! How could that be? After I put a paver underneath the week spot? I said you know what, let's fill her up, the water is cheap, see what happens. Two days later, I am 2.5" off level in that corner compared to 2" off level on that whole side. Not bad compared to where I started! I want to know if this will create major issues in the short term. If it will, I will throw the darn thing out as I am fed up with myself that I cheaped out and did not hire a professional! Keep in mind, I want to keep this pool for 1-2 seasons max, it will be drained about halfway for winter time. So I basically need the pool to hold up until next september when i will have the money to do a inground pool of a similar size. What are your thoughts?

That pool is too big to take any chances. I say drain and level properly. Use stonecrush, not sand. Compact the surface and make sure it is within 1" level all over. Bury pavers, at least 2" thick, flush with the surface and sitting on firm, level base. Check that all pavers are within 1/2" level. Then refill and never worry again.
