I am trying to decide if we should use travertine pavers for our decking or porcelain pavers. One huge concern is how hot it will be to touch in the summer months

Everyone's temperature threshold will be a bit different.
Get one of each paver/tile you are considering and place them out in the sun. Maybe if it starts warming up in the next week or two here in AZ, you will be able to determine which might work best for you.
Also, wet them down and check how slippery they may be. Non-slip will work the best.
