We have an old rectangular pool with two return jets, both on the opposite side of the skimmer - one in the shallow end and one in the deep end (direct opposite of skimmer). Which direction and at what angle should my return jets be pointing?

You can try to point the jets towards the skimmer. Depending on the water force and wind in your area, you may not see huge differences. You could toss some ping pong balls or packing peanuts on the water to test the circulation.
