Coping repair

I’d like to patch/ repair the grout/ mortar spaces between these smooth coping bricks but I want to use the correct material. Mortar- grout- cement-concrete?? I don’t understand the difference.
I’d prefer it to be white( mortar?). But if it can’t be white then I guess I can always paint the gaps with masonry paint

Each is a slightly different cementitious mix.

Grout is the easiest to work with...
